Lazy Girl Chicken Salad

I came across this recipe on Jessica's blog, Lovely Little Things, and couldn't wait to try a healthier version of chicken salad.

Let me tell you, my friends, once you make this recipe you won't ever want to use mayo again!

I am going to call this concoction of deliciousness, The Lazy Girl Chicken Salad because I am not the best cook nor do I try perfect my skills.  I leave that to Ross...he is Top Chef in our house...my children are thankful (and so am I).



Truth be told, I am calling it The Lazy Girl because I used homemade guacamole from my H.E.B. grocery store.  For those Texas girls out there, if you haven't already, you MUST pick up a container of this green goodness.  If you don't live in Texas, I am sorry for rubbing it in.  You can whip up a batch of guacamole or just use a few avocados.

What you need:

Guacamole (or avocados)
Can of white meat chicken
A handful of cilantro
A handful of green onions
Lime juice
Salt and Pepper to your liking

Just mix it all together and you are ready to go!

I ate mine with some the cracked pepper and olive oil Triscuits.  For Round 2 I think I may try it on some toasted bread.  This is great for a gluten-free diet or for those who don't care much for mayonnaise.

I can't wait for Ross to try it when he gets home.  He's going to be so proud of me!  I am actually pretty impressed with myself.  

Don't get too excited about this recipe post...I have a feeling you won't be seeing too many of these in the future.  But, if I make something new and it actually tastes good, I will be sure to let you know!

Cheers to easy recipes that make you lick you lips and say, "Mmmmm, did I make this!?".

I LOVE this! I don't cook much and like quick things, and this looks delsih, and though my sister both make guacamole from scratch, I buy mine, like you do too! :) Yum!

I hardly ever cook but maybe ill give this a try and make it for my husband. I'm a vegetarian and he isn't so he would be happy to have some meat for once :)

That is HANDS DOWN the best guacamole on the planet. I can't help but grab a container if I see a fresh batch in the produce department.
